Chicken Parmesan Casserole

Chicken Parmesan Casserole

Ingredients
- 3 pounds boneless skinless chicken breasts or thighs, cut into cubes
- ¼ cup chopped fresh basil leaves
- 4 garlic cloves minced
- 1 8-ounce package fresh mozzarella, sliced
- 1 26-ounce jar prepared pasta sauce
- Cooked gluten-free pasta brown rice, or fresh spinach, for serving
- Grated Parmesan cheese for serving
Instructions
- Use a 6-quart slow cooker sprayed with gluten-free cooking spray. Add the cut pieces of chicken to the prepared insert. Sprinkle with the basil and minced garlic. Top with the mozzarella slices. Pour the pasta sauce evenly over the top. Cover and cook on low for 7 hours or on high for about 4 hours.
- Serve on top of gluten-free pasta, brown rice, or a bed of fresh spinach leaves with grated Parmesan cheese if desired.
