Mediterranean Pasta Salad

Ingredients
- Kosher or fine sea salt
- ½ pound gluten-free spiral pasta
- 6 ounces sun-dried tomato pesto
- ¼ cup extra-virgin olive oil
- 2 cups shredded cooked chicken
- ¾ cup Kalamata olives pitted and halved
- 8 ounces feta cheese cut into cubes
- Freshly ground black pepper
Instructions
- Bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions. Drain, rinse with cold water, and drain again.
- In a large mixing bowl, combine the pesto with the olive oil, whisking well. Add the pasta, chicken, and olives. Stir to coat. Add the feta cheese and mix gently. Season with salt and pepper to taste.
