Walnut, Apple & Tuna Salad

Ingredients

  • 2 6-ounce cans chunk light tuna, drained and rinsed
  • 1 medium green apple cored and diced
  • 1 large celery stalk diced
  • 5 tablespoons chopped raw walnuts
  • 2 tablespoons finely chopped fresh parsley
  • ½ cup mayonnaise
  • 2 tablespoons honey
  • Pinch of cumin seeds
  • Sea salt and black pepper to taste
  • 4 cups baby spinach

Instructions

  • In a large bowl, combine all of the ingredients except the spinach. Gently toss to combine. Serve over a bed of baby spinach.
