Salmon & Kale Croquettes with Maple Mustard Sauce
Serve these easy-to-make croquettes with roasted sweet potatoes and a big salad for a simple and nutritious meal. They can also be served cold in lunches.
Salmon & Kale Croquettes with Maple Mustard Sauce

Ingredients
For the sauce:
- ½ cup Dijon mustard
- ¼ cup extra-virgin olive oil
- ¼ cup pure maple syrup
For the croquettes:
- 1 cup finely chopped kale leaves
- ¼ cup water
- 2 6-ounce cans boneless, skinless salmon (preferably Pacific or Alaskan), drained
- 2 tablespoons finely chopped flat-leaf parsley
- 2 tablespoons finely chopped onion
- 2 tablespoons ground flaxseed
- 1 large egg
- 1 tablespoon Dijon mustard
Instructions
- Preheat the oven to 375ºF. Line a baking sheet with parchment paper. In a small bowl, whisk together all of the ingredients for the sauce until smooth.
- Place the kale and water in a small pot over medium-high heat. Bring to a rapid simmer. Cover and cook for 2 minutes. Drain well and transfer the kale to a large bowl. Add the salmon, parsley, onion, flaxseed, egg, and mustard. Stir to combine. Form the mixture into 8 patties of equal size.
- Place the patties on the lined baking sheet. Bake for 10 minutes. Flip and continue baking for another 10 minutes. Serve the croquettes with the sauce on the side.
