Mexican-Style Grilled Corn on the Cob

Mexican-Style Grilled Corn on the Cob

Ingredients
- 6 medium ears of corn husks and silk removed
- 1 cup mayonnaise
- 2 cups crumbled queso fresco cheese divided use
- 1 teaspoon chili powder plus more for sprinkling
Instructions
- Preheat a grill to medium.
- Arrange the corn on the grill. Grill for about 10 minutes, turning regularly, until grill marks appear on each side. Remove from the grill and let cool slightly.
- Mix together the mayonnaise, 1½ cups of the cheese, and chili powder. Spread the mayonnaise mixture on each ear of corn. Sprinkle with the remaining cheese and chili powder.
