Ingredients
- 2 cups thinly sliced purple cabbage
- 2 cups thinly sliced green cabbage
- 1 medium carrot shredded
- 1 medium shallot finely chopped
- 3 tablespoons chopped fresh chives
- ½ cup slivered almonds toasted
- 1/3 cup dried cranberries
- ¼ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- Kosher or fine sea salt to taste
- Freshly ground black pepper to taste
Instructions
- In a large bowl, combine the cabbages, carrot, shallot, chives, almonds, and cranberries. In a separate bowl, whisk together the mayonnaise, vinegar, olive oil, honey, and mustard. Pour the dressing over the slaw and toss to coat well. Season to taste with salt and pepper. Serve right away or refrigerate in an airtight container until ready to serve.
