No-Bake Brownie Bites

These little bites are a quick and easy way to get your brownie fix without having to turn on the oven. They’re simple, healthy, and delicious, and they also double as a perfect pre- or post-workout snack!

No-Bake Brownie Bite

Ingredients

  • 10 pitted Medjool dates
  • ¾ cup raw almonds or nuts of choice
  • 3 tablespoons raw cacao powder or unsweetened cocoa powder
  • 2 tablespoons almond butter or nut butter of choice
  • 1 tablespoon maple syrup

Instructions

  • Place the dates and almonds in the bowl of a food processor fitted with the steel blade. Process on high until it resembles a crumbly, sandy texture.
  • Add in the remaining ingredients and process until a dough begins to form. Taking 1-2 tablespoons of dough in your hands, gently roll the mixture into balls. Repeat with the remaining dough.
  • Enjoy immediately or store in a sealed container in the fridge or freezer.

Notes

These can also be made into bars by pressing the dough into a square baking pan lined with parchment paper, then placing the pan in the fridge to set for about 30 minutes. Remove the parchment paper and slice the mixture into bars. Again, store these in an airtight container in the fridge or freezer.

    The reason 3 stars? This made EIGHT. I even made them smaller than the 1 T ..and you say 1 to TWO T. !!
    5 stars for the taste, but really now how the HECK did you even get 10 out of this??! Wish I could include a picture of how much this made.

      Hi Cali,
      I’m sorry these didn’t come out as expected in regards to the serving size. I mentioned this in response to your more recent comment, but just to comment on here as well, we will update the serving size on the recipe. This was a recipe from the magazine and was not tested in our in-house kitchen, as the recipe and photos were provided by one of our previous freelance writers. A large majority of the recipes in the magazine (and all of Carol’s recipes on the blog) are made and photographed in our in-house kitchen, but there are some you’ll come across in the magazine and on the website that are from different writers. I can reach out to this writer if you’d like me to get some more information about the recipe, but in the meantime we’ll edit the serving size.

      I hope this helps, and I’m happy you at least enjoyed the taste of these! :)

    I see my 3 star comment from yesterday isnt there. And I wonder why there are zero comments. This issue with this recipe has been out a couple mos. No biggie, but NO other comments? I wanted to come back and say I did make them again, about an hour later..and again, they are delicious. But the size to get 10 was around a teaspoon…not a tablespoon. But, again, they are the BEST gf treat I’ve ever made! So I put 5 stars. My third attempt will b to double recipe, do the tablespoon measurement and see how many I get. At least it’s only 2 T nut butter, since I’m using walnut butter..a tad more expensive than others.

      Hi Cali,
      Your comment from yesterday had to be approved before going live – it’s how we keep spam comments off our website. We have a ton of recipes on our site and many of them do not have comments, it just depends on user interaction and whether people have tried a recipe and want to make a comment. As far as the serving size, I went back to the original recipe (this was published in our magazine and was written by one of our previous recipe writers) and it said 12-14. Because of the way our recipe format is set up, the plugin we use does not allow us to have a serving size range (12-14), so instead we have to pick one of those numbers. Seeing as this particular recipe doesn’t meet that number, we’ll go ahead and reduce the serving size. My only guess for the discrepancy is maybe she used very large dates for this, but since this was not a recipe made in-house by Carol, we can’t say for sure. I’m sorry it didn’t work out as expected, but I’m glad you like them overall and that they tasted great!
