Gluten Free Cajun Spinach and Salmon Recipe

If it’s too cold to go outside and barbecue, that’s OK! You can still get all the flavor and smokiness of an old-fashioned cookout in your kitchen, in your very own slow cooker.

This is one of my favorite indoor barbecue recipes, I hope you enjoy it!

Cajun seasoning will provide a smoky heat to any of your favorite foods. I like it on sweet potatoes, corn on the cob, and sometimes just sprinkled on a bowl of buttered rice. Here is a homemade mix you can make to keep in the cabinet in an airtight container.

Gluten Free Cajun Spinach and Salmon Recipe

Here is a homemade cajun mix you can make to keep in the cabinet in an airtight container to use on in kinds of dishes.

Ingredients

For the seasoning:

  • 3 teaspoons paprika
  • 2 teaspoons kosher or fine sea salt
  • 2 teaspoons garlic powder
  • teaspoons dried oregano
  • teaspoons dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper

For the dish:

  • 1 10-ounce bag fresh baby spinach leaves
  • 4 4 ounce salmon fillets
  • ¼ cup dark brown sugar
  • 1 tablespoon Cajun seasoning
  • Juice of 2 limes
  • Hot steamed rice for serving
  • 1 lime cut into wedges

Instructions

  • Combine all the seasoning ingredients and mix well. Set aside 1 tablespoon for this recipe and store the remainder in an airtight container.
  • Use a 6-quart slow cooker sprayed with gluten-free nonstick cooking spray. Rinse the spinach leaves and place them into your slow cooker insert.
  • Set the salmon fillets on top of the spinach. In a small mixing bowl, combine the brown sugar and Cajun seasoning. Sprinkle this evenly over the top of the fish. Add the lime juice.
  • Cover and cook on high for 2 hours, or until the fish flakes easily with a fork.Serve over hot steamed rice with a lime wedge.
