Summertime Potluck – Easy Slow Cooker Recipe

I love this time of year, with lots of outdoor barbecues and get-togethers. But just because the weather has warmed up and you are eating in the backyard, that doesn’t mean you need to neglect your slow cooker.

Slow cooking during the summer months is actually a fantastic way to keep your kitchen cool. Slow cookers give off very little heat while in use and won’t compete with your air conditioning, plus they can be used anywhere there is an outlet. So, if you have a screened-in porch, plop it there for the day!

One of my best tips for those who are gluten-free or who have any other types of allergies is to bring food with you wherever you go. Bring something so good that everyone wants to eat it, allergies or not.

Here is one of my favorite potluck take-alongs for the summertime months. Enjoy sharing this delicious take on pulled pork!

Ingredients

  • 1 5-pound boneless pork butt or shoulder roast
  • ¼ cup packed brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper
  • 1 18-ounce bottle gluten-free barbecue sauce
  • 10 hamburger buns or hoagie rolls for serving (or large romaine lettuce leaves)

Suggested toppings:

  • Jalapeño slices
  • Cheddar cheese
  • Coleslaw

Instructions

  • Use a 6-quart slow cooker. Place the roast into the insert. In a small bowl, stir together the brown sugar and dry spices. Rub this spice mixture evenly over all sides of the meat. Do not add any liquid to the pot.
  • Cover and cook on low for 8-10 hours, or until the meat shreds easily between two forks.
  • Drain the accumulated liquid, and stir in the prepared barbecue sauce.
  • Cover and heat on high for 20-30 minutes, or until heated through. Serve on gluten-free buns or in large lettuce leaves with your favorite toppings.
