Summertime Potluck – Easy Slow Cooker Recipe
I love this time of year, with lots of outdoor barbecues and get-togethers. But just because the weather has warmed up and you are eating in the backyard, that doesn’t mean you need to neglect your slow cooker.
Slow cooking during the summer months is actually a fantastic way to keep your kitchen cool. Slow cookers give off very little heat while in use and won’t compete with your air conditioning, plus they can be used anywhere there is an outlet. So, if you have a screened-in porch, plop it there for the day!
One of my best tips for those who are gluten-free or who have any other types of allergies is to bring food with you wherever you go. Bring something so good that everyone wants to eat it, allergies or not.
Here is one of my favorite potluck take-alongs for the summertime months. Enjoy!
Gluten Free Picnic Beans Recipe
Ingredients
- 1 pound lean ground beef or turkey
- 1 pound smoked bacon diced
- 1 medium onion diced
- 1 cup gluten-free ketchup
- ¼ cup brown sugar
- 1 30-ounce can pork-and-beans
- 1 15-ounce can kidney beans drained and rinsed
- 1 15-ounce can butter beans drained and rinsed*
- 1 tablespoon gluten-free liquid smoke
Instructions
- In a large skillet, brown the ground beef, bacon, and onions.
- While the meats and onions are browning, add the rest of the ingredients into the insert of a 6-quart (or larger) slow cooker. (Do not stir yet – this recipe requires gentle handling or the beans may fall apart.)
- Drain the meat and onions well and dump into the slow cooker. Use a large spoon to gingerly fold in the hot ingredients.Cover and cook on low for 8-10 hours. Stir well before serving.
