Ingredients

  • 2 pounds chicken thighs (bone-in or boneless)
  • 1 cup prepared chunky salsa
  • 2 teaspoons honey
  • cup golden raisins
  • cup slivered almonds
  • Kosher or fine sea salt - to taste
  • Freshly ground black pepper - to taste

Instructions

  • Use a 4-quart slow cooker. Place the chicken thighs into your slow cooker. In a small bowl, combine the salsa and honey. Smear this mixture onto all sides of the chicken. Sprinkle golden raisins and almonds on top.
  • Cover and cook on low for 6 hours or on high for about 3½ hours. Season to taste with salt and pepper and serve over a bed of brown rice or quinoa, if desired.
