Slow Cooker Garlic Parm Potatoes

Ingredients
- 2 tablespoons (30 mL) extra-virgin olive oil, plus more for the slow cooker
- 3 pounds (1.3 kg) baby golden potatoes, halved or quartered if large
- 2 tablespoons (30 g) butter or dairy-free butter
- 4 cloves garlic , minced or finely grated
- 1½ teaspoons (1.5 g) dried Italian seasoning
- Kosher or fine sea salt , to taste
- Freshly ground black pepper , to taste
- ¼ cup (25 g) grated Parmesan cheese (or dairy-free alternative)
- Chopped fresh chives , for garnish
Instructions
- Lightly coat the inside of a 6-quart slow cooker with olive oil. Add the potatoes, olive oil, butter, garlic, and Italian seasoning. Toss to combine. Season generously with salt and pepper. Cover and cook on low for 4-5 hours or high for 2-3 hours, until the potatoes are fork tender.
- Serve garnished with the Parmesan and chives.
