Gluten-Free Granola Pancakes

Gluten-Free Granola Pancakes
Ingredients
- 1½ cups gluten-free all-purpose flour blend
- 2 tablespoons sugar
- 2½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher or fine sea salt
- 2 large eggs
- 1 cup milk of choice
- 1 teaspoon pure vanilla extract
- 1 tablespoon melted butter or dairy free butter , plus more for cooking the pancakes
- 1 cup Flax 4 Life Apple Cinnamon Snacking Granola , crumbled, plus more for serving
- Pure maple syrup
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a small mixing bowl, whisk together the eggs, milk, and vanilla. Add the wet ingredients to the dry and mix well. Stir in the granola.
- Heat a skillet over medium heat until a drop of water sizzles instantly. Melt some butter on the skillet and ladle on ¼ cup of pancake batter for each pancake. Cook until the edges look dry, bubbles form on the surface of the pancake, and the bottom is golden brown, about 3-4 minutes. Flip and cook for another 2 minutes or until the bottom is golden brown.
- Serve with maple syrup and some more granola on top.
