Prosciutto-Wrapped Stuffed Dates

Ingredients
- 3 ounces cream cheese or dairy-free cream cheese
- 1-1½ teaspoons lemon zest , to taste
- 1-2 tablespoons lemon juice , to taste
- ⅓ cup fresh parsley leaves , minced
- Kosher or fine sea salt
- Freshly ground black pepper
- 12 large Medjool dates , pitted
- 6 slices prosciutto , sliced in half lengthwise
Instructions
- Preheat the oven to 375°F.
- In a small bowl, combine the cream cheese, lemon zest, lemon juice, and parsley; season with salt and pepper, to taste.
- Fill the dates with a heaping teaspoon of the cream cheese mixture.
- Next, wrap the dates with the halved prosciutto slices and secure with toothpicks if necessary.
- Arrange on a small nonstick baking sheet and bake until the prosciutto is crisp, about 13-15 minutes.
- Let cool completely before serving.
