Crispy Rice with Szechuan Tofu

Have you heard of this latest TikTok trend called crispy rice? This rice trend on TikTok calls for browning rice and turning it into tiny fried rice cakes. This Crispy Rice with Szechuan Tofu is a tasty take on this trend and best of all its gluten-free.

To make this crispy rice recipe you first start out by cutting the tofu into small squares. In a bowl place the tofu in with the cornstarch and coat the tofu well. Then in a large skillet, place the tofu in the hot pan and cook until crispy. Once the tofu is crispy you remove to a paper towel lined plate you add the red peppers and San-J Szechuan Sauce to the skillet until it heats through. Then with a mini waffle maker you place a packed ball of rice and press down the lid until the rice is golden. Once the remaining rice is golden and flatten you place the tofu mixture on top of the rice cake. I like to garnish mine with green onion and sesame seeds.

Crispy Rice with Szechuan Tofu

Ingredients

  • 16 ounces extra firm tofu
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper–red , yellow, or orange, diced
  • cup San-J Szechuan Sauce
  • 2 cups cooked sushi rice
  • ¼ cup seasoned rice vinegar
  • Gluten-free non-stick cooking spray
  • 2 green onions , thinly sliced
  • Sesame seeds

Instructions

  • Place tofu between sheets of paper towels, place a heavy object on top and let sit for 30 minutes.
  • Cut tofu into small squares and place in a bowl with cornstarch. Stir until the tofu is well coated.
  • Heat vegetable oil in a large skillet over medium-high heat. Using tongs, place the tofu into the hot pan and cook, turning often until lightly crispy, 5–7 minutes. Remove tofu from pan to a paper towel lined plate.
  • Add the bell pepper and cook, stirring often until tender, 4–5 minutes. Add sauce and heat through.
  • Combine sushi rice and vinegar.
  • Heat a mini waffle maker and spray with cooking spray. Take about ½ cup rice and press into firmly packed ball. Put in waffle makes, press down the lid, and cook for 5–6 minutes or until crispy and lightly golden brown. Repeat with remaining rice.
  • Serve the tofu on the crispy rice waffle and top with green onions and sesame seeds.
