Cabbage Slaw with Cilantro Lime Dressing

Ingredients
- 4 cups thinly sliced green cabbage
- 2 cups thinly sliced red cabbage
- 1 cup thinly sliced scallions
- ¼ cup pumpkin seeds toasted
- ¼ cup extra-virgin olive oil
- ¼ cup fresh lime juice
- ¼ cup finely chopped cilantro
- 2 tablespoons honey
- 1 teaspoon finely grated lime zest
- Sea salt and black pepper to taste
Instructions
- In a large bowl, combine the green and red cabbage, scallions, and pumpkin seeds. In a separate bowl, whisk together the olive oil, lime juice, cilantro, honey, and lime zest.
