Gluten Free Au Gratin Potato Casserole Recipe

This is a great way to use up the extra leftover meat from a previous meal. It feeds an entire houseful of company, but doesn’t feel like “leftovers.” The creamy sauce is phenomenal – you’re really going to love it!

Gluten Free Au Gratin Potato Casserole Recipe

Ingredients

  • Gluten-free nonstick cooking spray
  • 6 baking potatoes Idaho or Russet peeled and sliced into ¼-inch pieces
  • 2 cups leftover ham or turkey diced
  • 1 medium white onion peeled and diced
  • 4 teaspoons dry mustard
  • 2 teaspoons ground thyme
  • teaspoons kosher or fine sea salt
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon white pepper
  • 2 cups half-and-half
  • cups 1% milk
  • ½ cup unsalted butter melted
  • 1 cup shredded cheddar cheese

Instructions

  • Use a 6-quart slow cooker sprayed well with cooking spray. Put ⅓ of the potato slices into the slow cooker insert and add a handful of cooked and diced meat. In a large mixing bowl, combine all the other ingredients. Pour ⅓ of this mixture onto the meat and potatoes. Repeat layers of potatoes, meat, and the mixture, until you run out of ingredients.
  • Cover and cook on low for 8 hours or on high for about 5 hours. Uncover and continue to cook on high for an additional 30 minutes to release the condensation.
