Gluten Free Stuffin’ Muffins Recipe

Ingredients
- Oil or gluten-free nonstick cooking spray
- 3 cups cooked gluten-free stuffing
- 1 cup chopped cooked turkey
- ¼ cup whole cranberry sauce
- 7 large eggs
- 3 tablespoons milk or dairy-free milk
- ¼ teaspoon kosher or fine sea salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 375°F. Grease 18 standard muffin tins well.
- Combine stuffing, turkey, and cranberry sauce in a mixing bowl. Divide the mixture among the prepared muffin tins, loosely packed.
- In a medium mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour over the stuffing in the muffin tins, filling between ½ and ¾ full. Bake for 25-30 minutes or until set and browned.
- Can be reheated, as needed, in the microwave or oven.
