Shrimp & Cucumber Leprechaun Bites
I grew up loosely Irish. My sister and I called it “Irish-ish.” This recipe comes from my mother and was part of many of our St. Patrick’s Day celebrations. This simple, light appetizer always disappears immediately. It is a nice balance to the heavier traditional St. Patrick’s Day dishes that are usually served.
Shrimp & Cucumber Leprechaun Bites
Servings: 6 servings approximately

Ingredients
- ½ pound cooked shrimp - peeled, deveined and finely chopped
- ½ cup mayonnaise
- 2 green onions - thinly sliced
- 1 celery rib - finely chopped
- 1 teaspoon dill pickle relish
- 1 tablespoon fresh lemon juice
- ¼ teaspoon sweet paprika
- ¼ teaspoon kosher or fine sea salt
- Dash cayenne pepper
- 1 medium English cucumber - cut into ¼-inch slices
- Chopped chives - for garnish
Instructions
- In a small bowl, combine shrimp, mayonnaise, green onions, celery, relish, lemon juice, paprika, salt, and cayenne pepper. Once evenly mixed, spoon about 2 teaspoons onto each cucumber slice. Top each one with a sprinkle of fresh chives. Serve immediately.
