Smoked Salmon “Tarts”

Ingredients

  • 4 gluten-free rice cakes
  • 6 tablespoons (90 g) cream cheese or dairy-free cream cheese
  • 4 ounces (114 g) smoked salmon
  • 4 very thin slices red onion
  • 1 teaspoon (3 g) capers
  • A few sprigs of dill
  • 1 lemon wedge
  • Pinch of freshly ground black pepper

Instructions

  • Top the rice cakes with the cream cheese. Divide the smoked salmon evenly among the rice cakes. Separate the red onion rings and top each rice cake with a few rings. Sprinkle capers over the tops of each. Garnish each rice cake with a few dill sprigs. Finish each “tart” with a squeeze of lemon juice and pinch of black pepper. Serve immediately.
