This lighter take on bagels and lox skips the bagels and layers all the fixings on crunchy rice cakes instead.

Ingredients
- 4 gluten-free rice cakes
- 6 tablespoons (90 g) cream cheese or dairy-free cream cheese
- 4 ounces (114 g) smoked salmon
- 4 very thin slices red onion
- 1 teaspoon (3 g) capers
- A few sprigs of dill
- 1 lemon wedge
- Pinch of freshly ground black pepper
Instructions
- Top the rice cakes with the cream cheese. Divide the smoked salmon evenly among the rice cakes. Separate the red onion rings and top each rice cake with a few rings. Sprinkle capers over the tops of each. Garnish each rice cake with a few dill sprigs. Finish each “tart” with a squeeze of lemon juice and pinch of black pepper. Serve immediately.
