Ingredients
- 5 tablespoons (75 mL) olive oil
- 2 tablespoons (30 mL) apple cider vinegar
- Kosher or fine sea salt
- Freshly ground black pepper
- 5 ounces (142 g) baby kale leaves
- 1 large apple , cored and grated
- ½ cup (25 g) grated carrot
- ½ cup (50 g) grated Parmesan cheese or dairy-free alternative
Instructions
- Combine the oil and vinegar with a large pinch of salt and pepper.
- Place the kale in a serving bowl, pour over the dressing, and massage the dressing into the kale for a couple minutes. Add the apple, carrot, and cheese. Toss to coat. Season to taste with more salt and pepper, if desired.
