Ingredients

  • 5 tablespoons (75 mL) olive oil
  • 2 tablespoons (30 mL) apple cider vinegar
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 5 ounces (142 g) baby kale leaves
  • 1 large apple , cored and grated
  • ½ cup (25 g) grated carrot
  • ½ cup (50 g) grated Parmesan cheese or dairy-free alternative

Instructions

  • Combine the oil and vinegar with a large pinch of salt and pepper.
  • Place the kale in a serving bowl, pour over the dressing, and massage the dressing into the kale for a couple minutes. Add the apple, carrot, and cheese. Toss to coat. Season to taste with more salt and pepper, if desired.
