Gluten-Free Dairy-Free Beer Cheese Soup
Creamy, savory, and full of cheesy flavor, this Gluten-Free Dairy-Free Beer Cheese Soup recipe is a fun and flavorful dish to serve during the fall season. It’s great for football-watching get-togethers, for a soup-and-salad lunch date with friends, or for a make-ahead lunch to take to work. It’s simple to make, with just a few ingredient tips to follow.
First, to make this dairy-free, I used Loca’s delicious potato-based queso. This dairy-free cheese sauce doesn’t contain soy or nuts like other dairy-free cheeses. Second, you have to make sure the beer you get is gluten-free (not gluten-removed). Gluten-free beer is made with gluten-free grains, where gluten-removed beer is made from gluten-containing grains and then gets an enzyme added to “remove” the gluten, but many people with celiac report symptoms from this type of beer, so it’s safest to go with gluten-free. Redbridge is an easy to find gluten-free beer. Glutenburg is also pretty easy to find. Be sure to select something mild, like a lager or pilsner style.

Gluten-Free Dairy-Free Beer Cheese Soup
Ingredients
- 2 tablespoons olive oil
- 1 medium white or yellow onion , diced
- 1 jalapeño pepper , seeded, deveined, and chopped
- 2 ribs celery , sliced
- 2 cloves garlic , minced
- 1 (12 ounce) gluten-free beer
- 1 cup low sodium vegetable broth
- 2 (12 ounce) jars Loca Foods Mild Queso
- Gluten-free pretzels or pretzel bites for garnish , optional
- 2 green onions , sliced, for garnish (optional)
Instructions
- Heat the oil in a Dutch over or large saucepan over medium-high heat. Add the onion, jalapeño, and celery and cook until softened, about 5 minutes. Add the garlic and cook for another minute, stirring. Add the beer and cook for another minute. Add the vegetable broth and queso, lower the heat, and simmer until heated through.
- For a smooth soup, blend until smooth or leave with chucky vegetables. The soup will be creamier if you blend it.
- Garnish as desired and serve.
