Maybe I have a bad memory, but I hardly ever remember eating eggs for breakfast when I was growing up. We were more of a hot or cold cereal (but not sugary cereals, which I thought was VERY unfair – right up there with the no Saturday morning cartoon rule), toast or toasted English muffins and stewed, dried fruit (gross!) kind of breakfast family. The exception was when I was ill. Then it was soft boiled eggs.

I loved soft boiled eggs and I still do. Maybe it is because I was always served them when ill that they always have seemed so comforting to me. The very best was when they were served in egg cups with little toast soldiers that I dipped into the perfectly runny yolks.

I love the ritual of soft boiled eggs – placing the hot egg in an egg cup, deftly (hopefully!) slicing off the top, sprinkling with course salt and scooping up the velvety rich, thickly runny yolk along with the just set white. Somehow it makes breakfast seem like a scene from an old movie where everyone had servants and breakfast was a shared morning routine. And I still like dipping “soldiers” into my soft boiled eggs.

These days it is not toast that dips into my yolks but bacon wrapped asparagus. I cannot begin to describe the amazing blend of flavors and textures. You will just have to try it for yourself.

This is an easy Gluten Free Bacon Asparagus Egg Soldiers Recipe which can be quickly whipped up even on a workday morning and yet has a touch of elegance. And as an added bonus, in my family it is a great way to get those munchkins to eat veggies.

Ingredients

  • 4 slices bacon
  • 8 large asparagus spears – trimmed to about 5 inches long
  • 4 soft boiled eggs

Instructions

  • Preheat oven to 450 degrees.
  • Cut bacon slices in half and wrap half on the stalk of each asparagus spear working up until you get to the bud of the asparagus.
  • Place bacon wrapped asparagus spears on a foil lines baking sheet and cook for 15 minutes or until bacon is browned and crispy. Place briefly on a piece of paper towel to soak up the excess grease.

    When I was growing up we tried to have one weekend breakfast as a family. One of the choices was my dad’s specialty: Bacon and eggs, but he made 8min and 20sec eggs (or medium boiled) which he’d mash those with crumbled bacon. Heaven! We never mixed vegetable with it, but that sounds fantastic.

    OH MY GOD!

    We are making the most of the short uk asparagus season here and having it every other night, but I hadn’t even thought to have it for breakfast, and with bacon. I am going straight to the butchers in the morning to get me some organic unsmoked back bacon. Fantastic!

    I love love love soft boiled eggs but since going gluten-free I haven’t been eating them much. Just not the same without the toast, but I will definitely have to try this!!
