There can be a lot of insanity around the holidays but I have some really great insanity to tell you about! Shirley from gluten free easily has organized a truly stunning holiday event called Home For The Holidays Gluten Free Style. In our family we celebrate Christmas. It is like a nearly month-long preamble of mini traditions and events which culminates in the big event – Christmas morning.

It starts with decorating, gift making and buying, cookie baking and decorating, present wrapping, a dessert party, Christmas Eve soup dinner and then – ta da – Christmas morning!

It all begins before the sun is up with the stockings. Santa always packs our stocking full of silly, fun and sometimes useful things that make us smile. Always, always, always, he puts a fresh orange in the toe of the stocking. And he doesn’t neglect the adults in our house, everyone gets a stocking and everyone gets an orange – we collect them up and make fresh orange juice.

Then it is on to presents. The adults grab a cup of coffee or tea, we nibble on a holiday quick bread I have made the night before and the youngest (if they can walk and talk) passes out a gift to each person. We unwrap gifts slowly, oohing and ahhing over each other’s presents and each person takes their time to really look over what they got. I love this about my family! Each and every person seems to really appreciate every gift – there is no unwrap and on to the next one in our house. Unwrapping the gifts takes HOURS! And then it is time to eat.

I love Christmas breakfast the most! We are all still in our jammies, the kids absorbed with their new toys, the parents helping put in batteries or place stickers and I sneak off the make something nutritious to counteract the sugar-packed items Santa and others always inevitably seem to leave us.

Since I don’t like to sneak off for too long I cook bacon in the oven (no babysitting and it comes out perfectly), squeeze the juice, and make an egg dish that is both fancy and simple. I cut up fruit, slice up cheeses and salamis and we take a break from the day’s activities to eat on pretty china at the dining table (which of course was set the night before).

This year the star of the show is Gluten Free Baked Eggs Florentine, packed with spinach, fresh eggs and a quick hollandaise sauce it is spectacular and could not be easier! For the best results I use pastured eggs from Nature’s Yolk – trust me, they make a difference!

Gluten Free Baked Eggs Florentine Recipe

Ingredients

  • 3 large egg yolks
  • 1/8 teaspoon dry mustard - (or ¼ teaspoon Dijon mustard)
  • 1 tablespoon fresh lemon juice
  • salt and pepper
  • dash hot sauce such as Tabasco
  • ½ cup unsalted butter or dairy free butter substitute - melted
  • 1 tablespoon olive oil
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 4 (6 ounce) bags baby spinach
  • 8 large pastured eggs
  • Paprika

Instructions

  • Preheat oven to 400 degrees.
  • Prepare the blender hollandaise - place the egg yolks in a blender along with the mustard, lemon juice, a pinch of salt and the hot sauce, blend for 5 seconds or until fully combined. With the blender running, remove the plastic insert from the lid of the blender and slowly add the hot, melted butter. Continue to blend until all the butter is incorporated. Set aside.
  • Heat the olive oil in a large oven proof skillet over medium high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Turn the heat up to high and add the 1 bag of the spinach and cook until wilted tossing with tongs. Add the remaining spinach, one bag at a time until each addition is wilted.
  • Add 1/3 cup of the blender hollandaise and stir well to combine. With the back of a spoon, make 8 indentations in the spinach. Break the eggs into the indentations; (the eggs will spread and run into each other) sprinkle each egg with a little salt and pepper. Transfer the pan to the oven and bake until the egg whites are set and the yolks are still slightly runny, 6 – 8 minutes. Spoon the remaining hollandaise over each egg, sprinkle with some paprika and serve.

    This recipe looks really good! I love spinach and eggs, usually in a quiche but I’ll have to give this one a try! I love days off during the holidays because we can have a brunch instead of eating breakfast and leaving for work.

    I love the time I get to spend with my family. Christmas Eve has always been spent with my mom’s side of the family and Christmas Day has always been my dads. This year was a rough year for my family, both of my dad’s parents passed away exactly six months from each other and he and my step mom are getting divorced, so this year Bryan and I will be spending both Christmas Eve and Christmas Day with my Dad at his new house helping him get all set up and making it his own. Lots of delicious food will be made and enjoyed!

    I love the time to reflect on the birth of my Lord and Savior Jesus Christ. I love the time spent with family and the food, which finally I feel like I can eat almost normally again thank’s to the gluten free foods available today. My daughter treated me to a box of Better Batter All Purpose flour so I can make my Yorkshire Puddings for Christmas Dinner and actually get to eat some :).     What I enjoy most about the holidays is experiencing them through the eyes of my son. He is four now, and each year he has understood and enjoyed this season a little more. Everything is so new, so exciting, so much fun…the Christmas lights, the sugar cookies, the tree, the stockings, the family gatherings. We make a birthday cake on Christmas day to help him to understand that we’re celebrating Jesus’ birthday, and he loves doing that.

    Your Christmas morning sounds a lot like ours, only we make waffles for breakfast. I make gluten free/dairy free for myself & my husband makes regular for the rest of the family. Our waffles are made from scratch with orange peel and diced bacon. Yummy!! I use your flour and coconut milk and they are delicious!!

    This is a great healthy idea. I love this season with everything it brings! I especially love the colors! My favorite color is red, so everything looks particularly pretty this time of year. I also really like thinking about someone and deciding what that person would really like and doing everything possible to obtain the item for that person. But most of all, I love remembering the birth of my Savior at this time of year. I love singing about how He came to earth in the most disgusting of ways, when He deserved the best. How he lived and understood everything that we went through. I love reflecting on Christ in this season. That is the best part about it.

    What I love most about the holidays is the trip home and spending time with family. It’s the one time a year that we get to see everyone. We are the only ones from the family to move out of state, and we moved across the country at that! At Christmas we sit back and soak in every minute spent with our loved ones!

    How long, in what type of pan and at what temp. do you bake bacon?

      I place a wire cooling rack over a rimmed baking sheet and bake it for 10 – 12 minutes at 400 degrees. You can just lay the bacon directly on a baking sheet and not use the rack but I like that lots of the fat drips away.

    Our Christmas morning tradition is Mimosas in our jammies! Can’t go wrong with Mimosas! Then our Christmas Day meal is always fondue. Everyone takes part and it is a fun family dinner.

    I love the individual pans that you have here. Not sure my limited time will even stretch to this on Xmas morning, and unfortunately I’m probably the only one who would LOVE this dish. I might pre- make gluten-free pancakes or try a recipe I caught on pinterest (which I am loving for inspiration these days) for lining muffin tin with gf bread, bake egg & top with bacon…I can imagine your house is truly lovely at Christmas.     This looks fabulous! I need to work out how to have a couple of the eggs completely set (husband likes them cooked through). During the holidays, I love how there is a sense of warmth and love that seems to be everywhere. People want to be kind. (Now we have to figure out how to make it 365 days.)

    I love the time from Thanksgiving on to New Years Day starting with pulling out the decorations and reminiscing over who gave me my favorite ornaments, shopping for the perfect gifts, making delicious desserts and most importantly spending time with my family.     This recipe looks fabulous, but especially the individual pans. I thought, deeply, about buying miniature cast iron pans I saw this weekend…. now I wish I had. I started making eggs florentine with my first CSA. They gave us tons of “beet thinnings,” which were baby beet greens with teensy beetroots at the bottom. With a bit of spinach added, I made florentine weekly!
    We celebrate Hanukkah, and I love the latke parties!
