Gluten Free Chicken & Apple Skewers Recipe
Tell me if this sounds familiar:
Mom to kid: You didn’t eat all your lunch today, most of it is still in your lunch box.
Kid to Mom: My lunch is boring. I like what Andy’s Mom puts in his lunch box.
Later, after a call to Andy’s Mom, a trip to the grocery store, and proudly packing everything that Andy usually gets in his lunch box:
Mom to kid: You didn’t eat all your lunch today, most of it is still in your lunch box.
Kid to Mom: My lunch is boring. I like what Johnny’s Mom puts in his lunch box.
And so it goes. Mother’s desperate quests to get their kids their lunch at school.
I spent what seems like an eternity packing school lunches every morning and throwing half of it away every evening. And worrying that my kids were going to starve to death.
I did learn a few lunch time tricks that got my kids to actually eat the lunches I packed for them.
One such trick is that kids love stuff on sticks. They might not happily tuck into a grilled chicken breast but cut up that chicken, put it on a stick, preferably skewered with something else, and they love it.
And don’t forget, kids love flavor just as much as we do. Plain old chicken can go from boring to brilliant with the mere addition of some really tasty sauce. I flavor up these Chicken and Apple Skewers with SanJ’s gluten free Asian BBQ Sauce. It’s sweet (and we all know how kids love that!) and smoky with a hint of ginger. It’s familiar enough that kids will try it with just a touch of exotic to keep it from being boring.
These skewers are just as tasty cold as they are warm, perfect for packing in a lunch box. And you can make them the night before – even more perfect!
Gluten Free Chicken & Apple Skewers Recipe
Ingredients
- ½ pound boneless skinless chicken breasts, cut into 1½ inch cubes
- ½ teaspoon kosher or fine sea salt
- ¼ teaspoon black pepper
- 2 tablespoons San-J Asian BBQ Sauce plus more for serving if desired
- 2 large apples cored and cut into 1½ inch chunks
- 1 lemon juiced
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with foil.
- Place the chicken cubes in a small mixing bowl, add the salt, pepper, and BBQ sauce. Toss to coat. Place the chicken in a single layer on the prepared baking sheet and bake for 15 minutes or until the chicken is no longer pink inside. Let cool.
- Toss the apples with the lemon juice.
- Once the chicken has cooled, thread on small skewers alternating with apple chunks.
- If preparing the night before, wrap the skewers in plastic wrap and refrigerate.
- Serve with more San-J Asian BBQ Sauce on the side if desired.

Is there an alternative for the BBQ sauce that does not have Soy? Today is my first day on gluten/dairy/soy free diet. Thanks for any insight you have.
Hi! Yes, you can use any BBQ sauce you like, in particular Bone Suckin’ sauce is soy-free and one that I really like! :)
