Herbed Goat Cheese Mashed Potatoes

Ingredients
- 4 pounds Russet potatoes peeled and cut into 2-inch chunks
- 1 cup half and half
- 1 cup chicken or vegetable broth
- 4 ounces soft goat cheese
- ¼ cup finely chopped scallions
- ¼ cup finely chopped fresh chives
- 2 tablespoons finely chopped flat-leaf parsley
- Sea salt and black pepper to taste
Instructions
- Place the potatoes in a large pot and cover with cold water.
- Bring to a boil over high heat.
- Reduce heat to medium and continue to boil until the potatoes are tender when pierced with a fork, 15-20 minutes.
- Drain and return the potatoes to the hot pot over low heat.
- Add the half and half, broth, and goat cheese.
- Mash until desired consistency is reached.
- Stir in the scallions, chives, and parsley.
- Season to taste with salt and pepper. Serve.
